1 1/2 c salad oiil
2 c sugar
4 eggs
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
2 c flour
3 c grated carrots
1 c chopped pecans
1 tsp vanilla
Mix oil and sugar. Add eggs. Sift flour, baking powder, soda, salt and cinnamon together. Add to first mixture. Stir in carrots, pecans and vanilla. Bake in 3 10-inch pans at 350 degrees for 30 minutes.
